Oreo Stuffed Chocolate Cookies

  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips
  • 18-20 Oreo cookies

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add the eggs and vanilla extract to the butter mixture, and beat until well combined.

  4. In a separate mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.

  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.

  6. Fold in the chocolate chips until evenly distributed throughout the dough.

  7. Take a scoop of cookie dough (about 2 tablespoons) and roll it into a ball. Flatten the ball slightly and place an Oreo cookie on top of the dough.

  8. Take another scoop of cookie dough and roll it into a ball. Place the ball on top of the Oreo cookie, and use your hands to press the edges of the two dough balls together, so that the Oreo is completely covered in dough.

  9. Repeat with the remaining cookie dough and Oreo cookies, placing the cookies about 2 inches apart on the prepared baking sheet.

  10. Bake for 12-15 minutes, or until the edges are set and the centers are slightly soft.

  11. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

  12. Serve the cookies warm or at room temperature. Enjoy!
